We are down to just mere days before my husband comes home and I can’t wait! It has gotten tougher and tougher to find interesting ideas for dinner for me and an 8-year-old. Tonight I did what any self-respecting mom-in-the-social-media-know does, I polled my Facebook friends for dinner suggestions; chicken dinner suggestions to be more specific.

I had 7 or 8 great ideas and decided to let Caleb choose. He liked my friend Holly’s Salsa Chicken idea and offered a tip: “Take a circle (he meant a can) and hit the chicken really hard so that it’s flat like a patty. That’s the way my lunch lady at school does it.”

I had already planned on doing that but it tickled me that he knew that trick – maybe he’s actually been watching when we have the Food Network on?

The meal actually ended up turning out GREAT, and my picky eater had two servings of the chicken! It’s been a while since he’s cleaned his plate, so I was happy. (I was also happy that for once, my attempt to throw something together without an exact recipe actually worked! :) )

So the next time you’re stuck for a dinner idea, try this:

Salsa Chicken

Ingredients:

Chicken breast
Salsa (your preference, medium or mild)
Flour
A couple of dashes of cumin, cilantro and Tony Cachere’s seasoning (this is a staple if you’ve ever lived in Louisiana! We use it like salt!)
Egg whites
Shredded cheese

Instructions

Keep thawed chicken breast in plastic ziploc bag and flatten out using a heavy can or rolling pin. The flatter the chicken, the more tender it will be.

Mix some flour with a few dashes of cumin, cilantro and Tony’s (or another spice of your preference) in a bowl you’ll use to dip the chicken. Take egg whites and add to a separate bowl.

Dredge the chicken in the egg whites and then the seasoned flour (you can also use breadcrumbs in place of the flour). Add some drizzles of olive oil to a skillet on medium heat. Add the chicken and let it cook evenly on both sides until golden brown.

Then cover chicken with salsa and turn heat to low. Let chicken and salsa simmer and then top chicken with shredded cheese (cheddar, mozzarella or a little of each). Cover the skillet with a lid and let the cheese melt.

Serve chicken with blue corn tortilla chips and a side of sweet corn. Enjoy!
